I am unfortunately not familiar with Foundry but I believe you could if you manually replaced the image files in a progress clocks module. Sorry I don't have any specific experience to help out beyond that.
Not planning anymore updates on this pack. There is a 10-clock that could work if you do 2 ticks per. I will keep in mind on future projects that 5's are needed!

I know it was designed to be used with the Roll 20, but would it be possible to use it with the Foundry VTT?

Hrm, think this could ever get a 5 clock? A game I run often uses a 5 clock for adversarial counters.
